You could toast a crouton related topping and sprinkle cheese on, depends what kind of paisan you’re feeding, fuel/faff. Even better to do a turkey stock with bones, punchier taste. All the Tribe in-laws survive on chicken soup in winter, ie an entire chicken cut, sweet potato, onions, carrots, bay, serve sieved so it’s golden bronze
