there’s some weird similarities between French and American attitudes to food. one of them is the regional food thing. if you go to the alps you’ve got to eat the local cheese. if you go to Chicago you’ve got to have the local pizza. you can only make good bagels in New York because of the water. it’s useful in America coz the cities can be a bit bereft of standardized things to do when you’re visiting.

Detroit pizza is the best one but it’s shit in nyc. I rate UK pizza over American pizza, it’s got an Italian inflection to it these days, closer to that pole of the pizza map. waning US influence, alll. US slice shops are a better concept though, much nicer to be in than a UK pizza restaurant. a slice of pizza should be about the size of an average face
one of the most ubiquitous foods around the world. maybe the most. really versatile, everywhere adapts the concept to local tastes. cheap to make, easy to make. a beneficiary of industrial food production, food production and storage technology, which surely is something where all the innovation has come from the US
