Not sure how much ajvar has already been discussed on these pages? Anyway here's a recipe for it. Make this once a week. It's called Sydney Road Special.
slice and onion and fry for a few mins with olive oil.. add two chopped courgettes and a generous sprinkling of paprika and cayenne pepper and cook on high-ish heat for 10 mins.. then add chopped mushrooms and cook for 5 more mins.. then add the ajvar (about 3 fat spoons) and stir through and cook for further 5 mins. meanwhile, once the ajvar is in, put one packet of halloumi (chopped into bitesize cubes) onto a frying pan (pan should be sizzling hot). Once halloumi has been frying for 60 seconds (careful not to let it stick) add in a FUCKLOAD of chopped garlic (I always use a whole head). Fry the garlic and halloumi together for a couple more mins. Then tip into the pot with the courgettes and mushrooms. Stir it all together. Season if necessary. Serve with cous cous and turkish yoghurt. bosh.
